How We Make Our Maple Syrup From Our Woods to Your Table

Have you ever wondered how clear, watery tree sap turns into rich, golden maple syrup? Making syrup is part nature, part science, and a whole lot of family teamwork!

Here in Western New York, every spring brings the "sweet chaos" of maple season. While it takes a lot of hard work, the process is simple and natural. Here is a step-by-step looow we craft our pure, homemade maple syrup from scratch!

Step 1:

Tapping the Trees

When winter starts giving way to early spring—when nights are frozen and sunny days warm up—the sap inside maple trees begins to move. This is our cue to head into the woods!

We drill small, shallow holes into our maple trees and insert a "spout" or "tap." This doesn't hurt the trees at all—we are careful stewards of our woodlots so they stay healthy for generations to come.

Step 2:

Collecting the Sap

When the sap starts flowing out of the taps, it looks and tastes just like clear, cold water with only a tiny hint of sweetness.

Depending on the section of our woods, the sap flows into clean tubing lines that carry it straight to our collection tanks. We gather the fresh sap quickly so it’s ready to head to the sugarhouse.

Step 3:

Boiling It Down (The Magic Step!)

This is where the sweet cozy aroma fills the air! Fresh maple sap is actually about 98% water and only 2% sugar. To turn it into syrup, we have to evaporate almost all of that water away.

We pour the sap into a large, flat pan called an evaporator. As we boil the sap, water rises off as steam, leaving behind the natural sugars. As the sap boils, it thickens slightly and begins to take on a golden amber color from the carmelization of the sugars in the sap.

Fun Fact: It takes about 40 gallons of fresh sap to make just 1 single gallon of pure maple syrup!

Step 4:

Filtering & Bottling

Once the boiling liquid reaches the exact right temperature and density to officially become syrup, we draw it off the pan.

Before it goes into bottles, we filter the hot syrup to make sure it is crystal clear and super smooth. Then, while it's still piping hot, we pour it into our bottles and seal them tight to lock in that fresh, rich flavor.

Step 5:

Making Our Maple Confections

Pure syrup is just the beginning! We use our fresh maple syrup to craft all of our favorite handcrafted treats. By carefully heating and whipping the syrup or combining it with special ingredients, we make:

  • Maple Sugar & Maple Puffs
  • Maple-Coated Nuts & Maple Popcorn
  • Maple Mustard & Maple Dry Rub
